Refreshing Strawberry Soup
Makes 4 servings
Ingredients
2 cups strawberries, chilled, stems removed
1 cup low-fat buttermilk
1 tablespoon plus 1 teaspoon sugar
  Fresh mint leaves (optional)
   
Place all ingredients in food processor; process until smooth. Serve immediately or chill before serving. Garnish with mint leaves.
 
Variation   Substitute raspberries, cantaloupe, honeydew melon or nectarines for strawberries.
