Ingredients

|
boneless, skinless chicken breast halves
|
|

tablespoons grated Parmesan cheese, divided
|
|
3

tablespoons all-purpose flour
|
|
2

tablespoons olive oil
|
|
1
|
cup sliced mushrooms
|
|
1/2
|
medium onion, finely chopped
|
|
1/2
|
teaspoon dried rosemary, crushed
|
|
1

can (14-1/2 ounces) DEL MONTE® Diced Tomatoes with Basil, Garlic & Oregano
|
|

1. Slightly flatten each chicken breast. Coat breasts with 4 tablespoons cheese and then flour. Season with salt and pepper, if desired.
|

2. Heat oil in large skillet over medium-high heat. Cook chicken until no longer pink, turning once. Remove to serving dish; keep warm.
|
|
3. Cook mushrooms, onion and rosemary in same skillet over medium-high heat until tender. Add tomatoes; cook, uncovered, until thickened.
|
|
4. Spoon over chicken; top with remaining 2 tablespoons cheese. Serve with pasta and garnish with chopped parsley, if desired.
