Warm Mediterranean Rice Salad
Ingredients

cups uncooked UNCLE BEN'S® ORIGINAL CONVERTED® Brand Rice

teaspoons dried basil
1/2
cup red wine vinaigrette, divided
1
can (6 ounces) solid white tuna in water, drained and flaked
1
cup chopped green bell pepper
1
cup chopped tomato
1/2
cup diced red onion
1/2
cup (about 18 to 20) Kalamata or pitted black olives

Prepare rice according to package directions. Stir basil and about 1/3 cup vinaigrette into rice.

Meanwhile, combine tuna, bell pepper, tomato and red onion in large salad bowl.
3.
Add rice mixture to tuna and vegetables in salad bowl. Stir in remaining vinaigrette and olives.
Cook's Tip
Kalamata olives are a type of Greek olive that have been marinated in wine vinegar. They have a rich, fruity flavor.
