Cool and Creamy Pea Salad with Cucumbers and Red Onion
Makes 2 servings
Ingredients
2 tablespoons finely chopped red onion
1 tablespoon reduced-fat mayonnaise
1/8 teaspoon salt
1/8 teaspoon black pepper
1/2 cup frozen green peas, thawed
1/4 cup diced red bell pepper
1/4 cup diced cucumber
   
1. Combine onion, mayonnaise, salt and black pepper in medium bowl; stir until well blended.
2. Add remaining ingredients; toss gently to coat.
