tablespoon I CAN'T BELIEVE IT'S NOT BUTTER!® Spread, melted

(5- to 6-pound) roasting chicken

pounds all-purpose and/or sweet potatoes, cut into chunks

1. Preheat oven to 350°F.
2. In small bowl, blend soup mix, honey, water and I Can't Believe It's Not Butter!® Spread.
3. In 18×12-inch roasting pan, arrange chicken, breast side up; brush with soup mixture. Cover loosely with aluminum foil. Roast 30 minutes; drain off drippings. Arrange potatoes around chicken and roast covered, stirring potatoes occasionally, 1 hour or until meat thermometer reaches 175°F and potatoes are tender. If chicken reaches 175°F before potatoes are tender, remove chicken to serving platter and keep warm. Continue roasting potatoes until tender.
Note
Insert meat thermometer into thickest part of thigh between breast and thigh. Make sure tip does not touch bone.
Serving Suggestion
Serve with a mixed green salad, warm biscuits and Lipton® Iced Tea.
