SPAM™ Tostada Salad


Ingredients
8 (7-inch) CHI-CHI'S® flour tortillas
1 tablespoon vegetable oil
1 (12-ounce) can SPAM® Classic, cut into 1/2-inch strips
1 onion, cut into wedges
4 cups torn romaine lettuce
2 tomatoes, chopped
1 (2-1/4-ounce) can sliced ripe olives, drained
1 cup (4 ounces) shredded Monterey Jack cheese
  CHI-CHI'S® Salsa
   
In large skillet over medium-high heat, cook tortillas in hot oil 2 to 3 minutes or until crisp; set aside. In same skillet, cook SPAM® and onion 7 to 10 minutes or until SPAM® is browned. Meanwhile, toss together lettuce, tomatoes, olives and cheese. Place SPAM™ mixture on top of tortillas. Top with lettuce mixture. Serve with salsa.
