Spiced Grilled Bananas
Yield: Makes 4 servings
Ingredients:
3
large ripe firm bananas
1/4
cup golden raisins
3
tablespoons packed brown sugar
1/2
teaspoon ground cinnamon
1/4
teaspoon ground nutmeg
1/4
teaspoon ground cardamom or coriander
2
tablespoons margarine, cut into 8 pieces
1
tablespoon fresh lime juice
Vanilla low-fat frozen yogurt (optional)
Additional fresh lime juice (optional)
Preparation:
1.
Spray grillproof 9-inch pie plate with nonstick cooking spray. Cut bananas diagonally into 1/2-inch-thick slices. Arrange, overlapping, in prepared pie plate. Sprinkle with raisins.

Combine sugar, cinnamon, nutmeg and cardamom in small bowl; sprinkle over bananas and raisins and dot with margarine pieces. Cover pie plate tightly with foil. Place on grid and grill, covered, over low coals 10 to 15 minutes or until bananas are hot and tender.
3.
Carefully remove foil and sprinkle with 1 tablespoon lime juice. Serve over low-fat frozen yogurt and sprinkle with additional lime juice.
