Fresh Fruit with Peach Glaze


Ingredients
3 tablespoons sugar
1 tablespoon cornstarch
2 cups DOLE® Pineapple, Pineapple Orange or Pine-Orange-Banana Juice
1 tablespoon lemon juice
1/2 teaspoon grated lemon peel
8 cups cut-up fresh fruit such as DOLE® Fresh Pineapple, Bananas, Strawberries, Red or Green Seedless Grapes, Cantaloupe, Oranges, Peaches, Nectarines or Kiwi
  Fresh mint leaves (optional)
   
Prep time 5 minutes
Cook time 5 minutes
Combine sugar and cornstarch in medium saucepan. Stir in pineapple juice, lemon juice and lemon peel.
Cook and stir over medium-high heat 5 minutes or until mixture comes to boil. Reduce heat to low; cook 2 minutes or until slightly thickened. Cool slightly. Sauce can be served warm or chilled.
Arrange fruit in dessert dishes. Spoon glaze over fruit. Refrigerate any leftovers in airtight container.
