cup sour cream
1. Pierce each potato with fork; place on paper towel in microwave oven. Microwave on HIGH about 16 minutes or until tender, rotating once.
2. Meanwhile, cook onion and mushrooms in butter in large skillet until tender. Add meat and vegetables; heat through. Remove from heat; stir in sour cream.
3. Split tops of potatoes; fluff insides with fork. Season with salt and pepper, if desired. Spoon meat mixture over potatoes.
