Creamy Fettuccine with Prosciutto and Peas
Makes 2 main-dish or 4 side-dish servings
Ingredients
8 ounces uncooked fettuccine
2 tablespoons olive oil
4 cloves garlic, minced
3 ounces thinly sliced prosciutto or salami, cut into thin strips
1 cup frozen baby peas, thawed
1 cup half-and-half or whipping cream
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup freshly grated Parmesan cheese
  Julienned fresh basil (optional)
   
1. Cook fettuccine according to package directions; drain.
2. Meanwhile, heat oil in large skillet over medium heat. Add garlic; cook and stir 2 minutes. Add prosciutto and peas; cook and stir 2 minutes. Stir in half-and-half, salt and pepper; cook and stir 3 minutes.
3. Add fettuccine to skillet; stir to coat with half-and-half mixture. Stir in cheese. Top with basil, if desired. Serve immediately.
