Chicken di Napolitano

Ingredients

tablespoon olive oil
|

boneless, skinless chicken breasts (about 8 ounces)

can (14-1/2 ounces) diced tomatoes, undrained
|

1-1/4

cups water
|
|

box UNCLE BEN'S® COUNTRY INN® Rice Pilaf
|
|
1/4
|
cup chopped fresh basil or 1-1/2 teaspoons dried basil leaves
|

1. Heat oil in large skillet. Add chicken; cook over medium-high heat 8 to 10 minutes or until lightly browned on both sides.
|
|
2. Add tomatoes, water, rice and contents of seasoning packet. Bring to a boil. Cover; reduce heat and simmer 15 to 18 minutes or until chicken is no longer pink in center and liquid is absorbed.

|
3. Stir in basil. Slice chicken and serve over rice.

Cook's Tip
For more flavor, substitute diced tomatoes with Italian herbs or roasted garlic for diced tomatoes.
