BBQ Pork Stir Fry
Ingredients

(2-cup) bag UNCLE BEN'S® Boil-in-Bag Rice
1
pound whole pork tenderloin
1
tablespoon oil
2
teaspoons minced garlic
2
teaspoons minced fresh ginger
1
package (16 ounces) frozen stir-fry vegetable medley
2/3
cup barbecue sauce
2
tablespoons chopped fresh cilantro (optional)

Cook rice according to package directions.

Trim tenderloin of any fat; cut in half lengthwise, then into 1/4-inch slices.

Heat oil in large skillet over medium-high heat until hot. Add pork, garlic and ginger; cook about 3 minutes or until pork is no longer pink.
4.
Add vegetables and 1/4 cup water. Cover; cook 3 minutes, stirring occasionally.
5.
Stir in barbecue sauce. Cover; reduce heat and simmer 5 to 7 minutes or just until vegetables are tender and pork is cooked through.
6.
Serve pork and vegetables over rice. Garnish with chopped cilantro, if desired.
Cook's Tip
Choose a stir-fry vegetable medley, such as sugar snap peas, carrots, onions and mushrooms for this recipe.
