Skillet Sausage with Potatoes and Rosemary
Makes 4 to 6 servings

Ingredients

tablespoon vegetable oil
|
|
3

cups diced red skin potatoes
|
|
1
|
cup diced onion
|
|
1
|
pound BOB EVANS® Original Recipe Roll Sausage
|
|
1/2
|
teaspoon dried rosemary
|
|
1/4
|
teaspoon rubbed sage
|
|
|
Salt and black pepper to taste
|
|

tablespoons chopped fresh parsley
|
|

|
|
Heat oil in large skillet over medium-high heat 1 minute. Add potatoes; cook 5 to 10 minutes or until slightly brown, stirring occasionally. Add onion; cook until tender. Add crumbled sausage; cook until browned. Add rosemary, sage, salt and pepper; cook and stir until well blended. Transfer to serving platter and garnish with parsley. Refrigerate leftovers.
