Lemon/Lime Butterflies


Having a Mexican fiesta? Garnish each dinner plate with a lemon or lime butterfly and your guests will say “olé!” Add a flourish to baked cod or halibut by serving each portion with a delicate lemon butterfly. Get the kids to eat their vegetables by topping each serving with a lemon or lime butterfly.
 
Ingredients
  Lemon
Equipment
  Vegetable peeler or citrus stripper
  Cutting board
  Paring knife
   
1. Starting at one end of lemon, cut a thin strip of peel around lemon with vegetable peeler or citrus stripper. Repeat, starting at other end.
2. Place both strips on cutting board. Using paring knife, cut peel into very thin strips, each about 1 inch long.
3. Place lemon on cutting board. Cut off ends at place where peel has been stripped; discard ends. Thinly slice remaining lemon crosswise.
4. Cut each slice into thirds.
5. To make each butterfly, arrange two lemon wedges on desired food or plate, with points of wedges touching at center.
6. To make antennae, carefully place two strips of peel where lemon wedges touch.
 
Lime Butterfly   Substitute lime for lemon; continue as directed.
