Oven Breakfast Hash
Makes 6 to 8 servings
Ingredients
2 pounds baking potatoes, unpeeled (5 or 6 medium)
1 pound BOB EVANS® Original Recipe Roll Sausage
1 (12-ounce can) evaporated milk
1/3 cup chopped green onions
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup dried bread crumbs
1 tablespoon melted butter or margarine
1/2 teaspoon paprika
   
Cook potatoes in boiling water until fork-tender. Drain and coarsely chop or mash. Preheat oven to 350°F. Crumble and cook sausage in medium skillet until browned. Drain and transfer to large bowl. Stir in potatoes, milk, green onions, Worcestershire sauce, salt and pepper. Pour into greased 2-1/2- or 3-quart casserole dish. Sprinkle with bread crumbs; drizzle with melted butter. Sprinkle with paprika. Bake, uncovered, 30 to 35 minutes or until casserole bubbles and top is browned. Refrigerate leftovers.
