Citrus-Marinated Olives
Makes 2 cups

Citrus-Marinated Olives


Ingredients
1 cup (about 8 ounces) large green olives, drained
1 cup kalamata olives, rinsed and drained
1/3 cup extra-virgin olive oil
1/4 cup orange juice
3 tablespoons sherry vinegar or red wine vinegar
2 tablespoons lemon juice
1 tablespoon grated orange peel
1 tablespoon grated lemon peel
1/2 teaspoon ground cumin
1/4 teaspoon red pepper flakes
   
Combine all ingredients in medium glass bowl. Let stand overnight at room temperature; refrigerate for up to two weeks.
