Mocha Madness Munchies
Makes 2-1/2 dozen cookies
Coffee and chocolate—it’s a tasty combination!
 
Ingredients
1/4 cup strong coffee
2 squares (1 ounce each) unsweetened baking chocolate
1/2 cup (1 stick) butter, softened
1/2 cup powdered sugar
1/2 cup firmly packed light brown sugar
1 large egg
1/2 teaspoon vanilla extract
1-1/3 cups all-purpose flour
1/4 teaspoon baking soda
1-1/4 cups "M&M's"® Chocolate Mini Baking Bits
   
Preheat oven to 350°F. Lightly grease cookie sheets; set aside. Place coffee and chocolate in small microwave-safe bowl. Microwave at HIGH 30 seconds; stir. Repeat as necessary until chocolate is completely melted, stirring at 10-second intervals; set aside. In large bowl cream butter and sugars until well combined; beat in egg, vanilla and chocolate mixture. In medium bowl combine flour and baking soda; add to creamed mixture. Stir in "M&M's"® Chocolate Mini Baking Bits. Shape dough into 1-inch balls. Place about 3 inches apart on prepared cookie sheets. Flatten balls slightly. Bake 6 to 7 minutes. Cool 1 minute on cookie sheets; cool completely on wire racks. Store in tightly covered container.
