Herbed Parmesan Muffins
Makes 12 muffins
Ingredients
2 cups all-purpose flour, sifted
1/2 cup grated Parmesan cheese
1/2 cup chopped fresh basil, parsley or cilantro leaves
2-1/2 tablespoons sugar
2 teaspoons baking powder
2 teaspoons mixed Italian-style herb seasoning
1/2 teaspoon baking soda
1/2 teaspoon salt
1-1/4 cups buttermilk
2-1/2 tablespoons olive oil
2 egg whites
   
Preheat oven to 400°F. Combine flour, cheese, basil, sugar, baking powder, herb seasoning, baking soda and salt in large bowl. Combine buttermilk, oil and egg whites in small bowl until blended. Stir into flour mixture until just moistened. Spoon batter into nonstick muffin tin. Bake 15 to 20 minutes or until golden and wooden pick inserted in center comes out clean. Remove from pan. Serve warm.
