Beef & Blue Cheese Salad
Prep Time: 10 minutes
Yield: Makes 4 servings
Ingredients:
1
package (10 ounces) mixed green lettuce leaves

4
ounces sliced rare deli roast beef, cut into thin strips

1
large tomato, seeded and coarsely chopped or 8 large cherry tomatoes, halved

2
ounces (1/2 cup) crumbed blue or Gorgonzola cheese

1
cup croutons

1/2
cup prepared Caesar or Italian salad dressing



Preparation:
1.
In large bowl, combine lettuce, roast beef, tomato, cheese and croutons.

Drizzle with dressing; toss well. Serve immediately.


Cook's Notes: Gorgonzola is one of Italy's great cheeses. It has an ivory-colored interior that is streaked with bluish-green veins. Gorgonzola is made from cow's milk and has a creamy savory flavor. It can be found cut into wedges and wrapped in foil in most supermarkets.Serving Suggestion: Serve with warm crusty French bread.
