Southern Biscuit Muffin
Yield: Makes 12 muffins
Ingredients:
2-1/2
cups all-purpose flour
1/4
cup sugar
1-1/2
tablespoons baking powder
3/4
cup (1-1/2 sticks) cold butter
1
cup cold milk
Preparation:

Preheat oven to 400°F. Grease 12 standard (2-1/2-inch) muffin pan cups. (These muffins brown better on the sides and bottoms when baked without paper liners.)

Combine flour, sugar and baking powder in large bowl. Cut in butter with pastry blender or two knives until mixture resembles coarse crumbs. Stir in milk just until flour mixture is moistened. Spoon evenly into prepared muffin cups.

Bake 20 minutes or until golden. Remove from pan. Cool on wire rack.
Tip:
These muffins taste like baking powder biscuits and are very quick and easy to make. Serve them with jelly, jam or honey.
