from the Italian "alla parmigiana," is a term used to refer to dishes prepared
with Parmesan cheese. The most well-known preparations are veal parmigiana
and eggplant parmigiana. Each preparation begins by breading and
frying the main ingredient and then cooking or baking it in tomato sauce.
Parmesan cheese
is usually included in the bread-crumb breading but may be used as
a topping. Sometimes mozzarella cheese is used as a topping.
