Zwieback, meaning "twice baked" in German, refers to bread that is baked, sliced and baked again until it is crisp and dry. It may also be called rusk or, in French, biscotte. Zwieback, which is slightly sweet, is easy to digest. For this reason it is often served to very young children and anyone with digestive difficulties.
