A tortilla is a round, thin unleavened Mexican bread that is baked on a griddle. It can be made of either corn or wheat flour, water and a little salt. Traditionally the dough is shaped and flattened by hand and cooked on both sides on a hot griddle until dry and flecked with brown. Tortillas are a staple of Mexican and Tex-Mex cooking. They can be eaten plain or used as a base for tacos, burritos, enchiladas and many other dishes. Both corn and flour tortillas are available in supermarkets and Mexican markets either shelf stable or refrigerated.
The word tortilla in Spain refers
to a thin omelet. Tortilla Española is a popular example. It consists
of thinly sliced potatoes and onions cooked in an egg mixture in a skillet.
It may be served hot or at room temperature.
