Teriyaki is the term for a Japanese preparation of grilled meat or poultry that has first been marinated in a mixture of soy sauce, sake (Japanese rice wine), sugar and seasonings. The soy sauce and sugar combine to give the cooked food an appealing brown glaze. Teriyaki also can refer to a sauce made with these ingredients. It is sold bottled in most supermarkets and can be used for marinating or for adding flavor to simple stir-fry preparations.
