Tempura had its beginnings in the deep-fried foods, especially shrimp, that were introduced to Japan by Portuguese traders in the 1500's. This Japanese specialty is prepared by deep-frying shrimp, pieces of fish or pieces of vegetables that have been dipped in a light batter. The deep-fried foods should be eaten immediately for their crispy coating to be enjoyed. They may be dipped in a soy sauce for added flavor.
