Shortbread
 
 
 


Shortbread, which originated in Scotland, is a thick, rich cookie made with a high proportion of butter to flour and sugar. Traditionally served for Christmas and New Year's celebrations, shortbread was often pressed into round decorative molds. After baking, the shortbread was cut into wedges called petticoat tails. Today, shortbread may be shaped into rectangles or rounds called highlanders or it may be half-dipped in chocolate for royal shortbread. Chopped nuts, spices and candied fruit are sometimes added.
