Seviche, also spelled ceviche, refers to a dish of raw fish or shellfish, popular in Mexico and Latin America. The dish is prepared by marinating raw fish or shellfish in lime juice. The acid in the lime juice firms the fish and turns it opaque, thus mimicking cooking. Usually served as an appetizer, the dish is most often made with pompano, red snapper, sole, shrimp or squid. It may also include chopped tomatoes, chilies and onions.
