A relish is a simple accompaniment to a meal. It may be a raw vegetable, such as celery or carrot sticks, or a pickled item, such as pickles or olives. The relish serves as an accent or contrast to the main course.
The term relish often refers to a sweet-and-sour mixture of finely chopped pickled vegetables. Relishes are served chilled as a condiment. Examples include pickle relish for hot dogs and hamburgers, chowchow, piccalilli and corn relish.
