Quesadillas are one of Mexico's
most popular snacks. They are made from flour tortillas topped with shredded
cheese, such as Monterey Jack or Chihuahua. Then they are folded into half
moons and toasted on a griddle or in a skillet until the cheese melts. An
alternate method is to place the filling ingredients on a large tortilla.
The filling is then topped with a second tortilla, and the quesadilla is toasted
on a griddle. This large quesadilla is cut into wedges to serve. Usually served
as an appetizer or entrée, quesadillas may be garnished with guacamole
and salsa. Other popular fillings include refried beans, chorizo, chicken
and vegetables.
