This thick, amber-brown Asian sauce is made from fruit, usually plums but also apricots, cooked with vinegar, sugar, hot chili peppers and spices. Originally made in China to preserve the plums that grow there, it can range from excessively sweet to sweet-and-hot, depending on the brand. It is often served with duck or pork but may be most familiar to Americans as the sauce spread on the pancakes used to make moo shu pork.
