Oyster sauce is a thick, brown Chinese sauce made from oysters that are boiled with soy sauce and seasonings before being strained. It adds a surprisingly delicate taste to meat and vegetable dishes. Its salty and fishy taste dissipates when cooked with other ingredients. Oyster sauce is sold in many large supermarkets. It will last indefinitely in the refrigerator if stored in a glass jar.
