Niçoise, which is shortened from à la niçoise, means "as prepared in Nice," the city on the French Riviera. These dishes have a Mediterranean influence and include ingredient such as tomatoes, garlic, black olives, anchovies and sometimes olive oil and capers. The classic salad niçoise contains these ingredients plus tuna, green beans, onions, hard-cooked eggs and herbs. Niçoise
olives are small dark olives that are cured in brine and packed in oil.
