Mole is a reddish-brown or green sauce popular in Mexican cooking. There are many variations of this complex sauce, but most recipes include ground dried chilies, ground seeds (sesame or pumpkin), tomatoes (for red mole), tomatillos (for green mole), onions, garlic and spices. Other ingredients may include ground nuts, raisins or chocolate. Chocolate adds a hint of sweetness to mole poblano.
