Madeleine refers to a small, light cakelike cookie that is baked in a special pan with scalloped indentations, known as a madeleine pan. The cookies often accompany coffee or tea. Although usually simply flavored with lemon or orange, recipe variations may include cocoa, nuts or almond paste.
