Kolacky, also spelled kolachke, are small filled yeast rolls or rich cookies that originated in Eastern Europe. Typical fillings are poppy seed, prune, cheese and apricot. Yeast dough is cut into small circles or squares and a small depression is made in the middle of the dough to hold the filling. When cookie dough is used, it is rolled into thin sheets, cut into rounds, then the edges of the dough are folded over to partially cover the filling.
