Kim chee, also kimchi, is a hot-and-spicy vegetable mixture served at almost every Korean meal. The name means pickled vegetables. This condiment is made of pickled vegetables, usually cabbage, which are traditionally packed into tightly sealed jars and then buried in the ground to ferment. Today it is available in the produce section of large supermarkets and in Asian markets. It will keep for a long time when stored refrigerated.
