This popular Mexican dish is made from mashed ripe avocados, minced onion, chilies, lime juice and cilantro. A small amount of finely diced tomato may be added. Prone to discoloring, it must be served quickly once it is made. Its most popular use is as a dip with tortilla chips, but it is also used as a component in such dishes as tostados and tacos.
