A frittata is an Italian omelet in which the eggs are combined, before cooking, with other ingredients, such as meat, vegetables and herbs. The egg mixture is poured into a heavy skillet and cooked slowly over low heat. The top of the frittata may be finished either by turning over the omelet or by placing it under the broiler. The frittata is then cut into wedges and served.
