Fricassee is a stewlike mixture of poultry that is floured and sautéed (but not browned) in butter and then gently simmered in broth and sometimes white wine. Vegetables, especially carrots and onions, are added. The sauce is traditionally finished with cream or egg yolks, so the resulting dish is light in color. For health conscious cooks, milk can be substituted. Rabbit and veal may also be prepared in this manner.
