This thin, chewy bread is originally from Genoa, Italy. Focaccia is almost always rustically shaped in a shallow rectangular pan or in a thin round loaf. It is traditionally brushed with olive oil and sprinkled with salt before baking. Focaccia is often found today topped with herbs, garlic, sun-dried tomatoes, onions or vegetables. Serve it as a snack, as an accompaniment to soups and salads or as an appetizer. Increasingly popular in the United States, it is sometimes split and used for sandwiches.
