To flour means to apply a light
coating of flour to a food or piece of equipment. Applied to food, the flour
dries the surface. This helps food brown better when frying or sautéing
or keeps food, such as raisins, from sticking together. Baking pans are floured
for better release characteristics and to produce thin, crisp crusts. Rolling
pins, biscuit cutters, cookie cutters and work surfaces are floured to prevent
doughs from sticking to them.
