Fajitas originated in Texas. The traditional dish is prepared by marinating beef skirt steak in oil, lime juice, garlic and ground red pepper before grilling it. The steak is cut into thin strips and rolled in flour tortillas. Fajitas now often include grilled bell peppers and onions. They are served with sour cream, guacamole and salsa. Sometimes the dish is prepared with beef flank steak, chicken strips or shrimp.
