Extracts are very concentrated flavorings derived from a variety of foods. Well-known extracts include vanilla, lemon and almond. A pure extract is made by distilling and concentrating the natural oils in a food and mixing them with alcohol. Small amounts, usually a teaspoon or less, provide a lot of flavor impact without adding volume or moisture.
Imitation flavorings are chemical replications of their natural counterparts or creations of flavors that are not available in a natural extract form, such as coconut or maple. A wide variety of extracts and flavorings are available in the spice section of the supermarket. A basic kitchen pantry should have vanilla, almond and lemon extracts and maple flavoring. Extracts are sensitive to heat and light. To prevent evaporation and loss of flavor, keep bottles tightly closed and stored in a cool, dark place.
