Dumplings are usually made from a savory biscuitlike dough that is dropped by spoonfuls into a simmering soup or stew. They are cooked until firm to the touch and wooden toothpicks inserted into the centers come out clean. Dumpling dough may have herbs or seasonings added or may occasionally be stuffed with meat, cheese or vegetable fillings before cooking. Chinese dumplings are made by wrapping a thin sheet of dough around a savory filling and then steaming. Dessert dumplings are fruit-filled packages of pastry dough that are baked and often served warm with a sauce.
