Dim sum refers to small servings of food traditionally served in Chinese tea houses. Today, dim sum has achieved limited popularity in the United States. Dumplings and other small savory servings of food, such as shrimp balls and spring rolls, are generally served accompanied by tea in a dim sum restaurant. The patron chooses the items, usually from carts or trays, which are circulated throughout the establishment. The server generally counts the empty plates to determine the bill.
