To dice is to cut food into small cubes that are uniform in size. The smallest dice, which is about 1/8 of an inch, is best suited for delicate garnishing. More typical are sizes between 1/4 and 1/2 of an inch. Dicing is distinguished from chopping and mincing by the care taken to achieve a uniform size for an attractive presentation.
