Curing is a technique used to preserve foods, usually meat, poultry or fish, while imparting a distinctive flavor. The two most common methods are salt curing, when food is either soaked in brine or dried and packed in salt, and smoke curing, when food is smoked for long periods at low temperatures. Common cured foods include ham, corned beef, bacon, pickled herring and salt cod.
