Couscous, or semolina, is coarsely ground durum wheat. It is a staple in North African cuisines. Similar in texture and flavor to rice, it has the shape of very tiny beads. Most of the couscous found in the United States is very fast cooking as it is precooked or instant. Couscous is usually served as a side dish. The term couscous also refers to a North African meat stew in which semolina or cracked wheat is steamed in the top part of a special pot called a couscoussiére.
