Corn Syrup

Corn syrup is a thick, sweet and highly refined liquid made by treating cornstarch with acids and enzymes that cause it to liquefy. It is an important ingredient in pecan pie and can be flavored with maple extract for pancake syrup. Corn syrup also is invaluable in making candy and frostings since it prevents sugar from crystallizing. (Sugar crystals make candy grainy and coarse.) Light and dark corn syrups are available. Light syrups are clear; whereas, dark syrups have an amber color and a subtle taste.
