Consommé is a clear soup made from meat or poultry stock. The stock may be cooked further to reduce and concentrate it. The stock is clarified by adding egg whites (and sometimes egg shells) and simmering 10 to 15 minutes. The sediment becomes entangled with the coagulated egg whites and rises to the surface where it is skimmed off with a slotted spoon. Then the liquid is strained through a cheesecloth-lined sieve. Consommé can be enriched with other ingredients, such as small meat dumplings, diced vegetables or filled pasta.
